Christmas Fishes Feast

1.Preheat the oven to 375°F (190°C).

2.Prepare the salmon by cleaning and gutting it. Score the skin of the salmon with diagonal cuts.

3.Season the salmon with salt, pepper, and a drizzle of olive oil. Stuff the cavity with lemon slices and fresh dill.

4.Place the salmon on a baking tray lined with foil and bake for 30-40 minutes, or until cooked through.

7.Deglaze the skillet with white wine. Add cherry tomatoes and vegetable broth. Simmer for 5-7 minutes.

8.In a small bowl, mix cornstarch with water to create a slurry. Stir the slurry into the skillet to thicken the sauce.

9.Stir in heavy cream and grated Parmesan cheese. Simmer until the sauce is creamy and thickened.

10.Serve the baked salmon with the seafood sauce and crusty bread on the side. Garnish with fresh parsley before serving.
