Sweet Potato and Ground Beef Casserole

1.Preheat the oven to 375°F (190°C).

2.In a skillet, cook the ground beef over medium heat until browned. Add the chopped onion and minced garlic, and cook until the onion is translucent.

3.Add the diced tomatoes, beef broth, paprika, cumin, and chili powder to the skillet. Stir well and simmer for 10 minutes.

4.Layer the sliced sweet potatoes in a baking dish. Pour the beef mixture over the sweet potatoes.

5.Cover the baking dish with foil and bake in the preheated oven for 45 minutes.

6.Remove the foil, sprinkle the shredded cheddar cheese over the casserole, and bake for an additional 10 minutes until the cheese is melted and bubbly.

7.Garnish with chopped fresh parsley before serving.
