Christmas Mappas

1.In a large pan, heat coconut oil over medium heat.

2.Add sliced onions and sauté until golden brown.

3.Add minced ginger, garlic, and green chilies. Sauté for a few minutes until fragrant.

4.Add turmeric powder, red chili powder, coriander powder, and garam masala. Mix well to combine all the spices with the onions.

5.Add the chicken pieces to the pan and coat them well with the spice mixture. Cook for about 5-7 minutes until the chicken is slightly browned.

6.Pour in the thin coconut milk and bring it to a simmer. Cover and cook until the chicken is almost cooked through, stirring occasionally.

7.Once the chicken is almost cooked, add the thick coconut milk and curry leaves. Simmer for another 5-7 minutes until the chicken is tender and the curry thickens.

8.Adjust the seasoning with salt as needed.

9.Serve hot with steamed rice or appam for a delicious Christmas meal!
