Spicy Pork Sausage and Potato Hash with Creamy Tomato Sauce

1.Heat a large skillet over medium heat and add a drizzle of oil.

2.Add the diced onion to the skillet and sauté until translucent, about 3-4 minutes.

6.While the sausage and potatoes are cooking, in a small bowl, mix together the mayonnaise, tomato puree, and tomato ketchup to create a creamy sauce. Set aside.

7.In a separate pan, fry the eggs to your liking (sunny side up, over easy, or scrambled).
