One-Pot Orzo Delight with Sausage, Spinach, and Corn

1.In a large pot or Dutch oven, heat the olive oil over medium heat.

2.Add the diced onion and sauté until translucent, about 3-4 minutes.

3.Stir in the minced garlic and cook for an additional 1 minute until fragrant.

4.Add the Italian sausage to the pot, breaking it up with a spoon, and cook until browned, about 5-7 minutes.

5.Once the sausage is cooked, add the orzo pasta, corn, chicken broth, dried oregano, paprika, red pepper flakes (if using), salt, and pepper. Stir well to combine.

6.Bring the mixture to a boil, then reduce the heat to low and cover the pot. Let it simmer for about 10-12 minutes, or until the orzo is tender and has absorbed most of the liquid, stirring occasionally.

7.Once the orzo is cooked, stir in the chopped spinach and cook for an additional 2-3 minutes until the spinach is wilted.

8.Remove the pot from heat and stir in the grated Parmesan cheese until melted and creamy.

9.Taste and adjust seasoning with more salt and pepper if needed. Serve warm.
