Spicy Black Goat Curry (Kalabhuna)

1.Heat mustard oil in a large pot over medium heat until it starts to smoke slightly.

2.Add the sliced onions and sauté until they turn golden brown.

3.Stir in the ginger-garlic paste and green chilies, cooking for another 2-3 minutes until fragrant.

4.Add the goat meat to the pot and sear it on all sides for about 5-7 minutes.

5.Sprinkle in the turmeric, red chili, cumin, and coriander powders, mixing well to coat the meat evenly.

6.Pour in the whisked yogurt and stir to combine, allowing the mixture to simmer for 10 minutes.

7.Add salt to taste and enough water to cover the meat. Bring to a boil, then reduce the heat to low and cover the pot.

8.Let the curry simmer for 1.5 to 2 hours, or until the meat is tender and the sauce has thickened, stirring occasionally.

9.Once cooked, sprinkle garam masala over the top and mix gently.

10.Garnish with fresh coriander leaves before serving.
