Sweet Potato Smash Bites with a Crunchy Coating

1.Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

2.Peel the sweet potatoes and cut them into chunks. Place them in a pot of boiling water and cook for about 15-20 minutes, or until they are tender.

3.Drain the sweet potatoes and let them cool slightly. Then, mash them in a large bowl until smooth.

4.Add the egg, garlic powder, onion powder, paprika, salt, pepper, and chopped parsley (if using) to the mashed sweet potatoes. Mix until well combined.

5.Scoop out small portions of the sweet potato mixture and form them into bite-sized balls or patties.

6.In a shallow dish, combine the breadcrumbs and grated Parmesan cheese. Roll each sweet potato ball in the breadcrumb mixture until fully coated.

7.Place the coated sweet potato bites on the prepared baking sheet, spacing them out evenly.

8.Bake in the preheated oven for 20-25 minutes, or until the bites are golden brown and crispy on the outside.
