Savory Onion and Cheese Stuffed Pastries

1.In a large bowl, combine the flour and salt. Add the cold, cubed butter and mix until the mixture resembles coarse crumbs.

2.Gradually add the cold water, mixing until the dough comes together. Form the dough into a ball, wrap in plastic wrap, and refrigerate for at least 30 minutes.

3.While the dough is chilling, heat the olive oil in a skillet over medium heat. Add the finely chopped onions and sauté until they are soft and caramelized, about 15-20 minutes. Stir occasionally to prevent burning.

4.Once the onions are caramelized, remove from heat and let cool slightly. In a bowl, combine the sautéed onions, shredded cheese, and black pepper. Mix well to combine.

5.Preheat your oven to 400°F (200°C).

6.On a floured surface, roll out the chilled dough to about 1/8 inch thick. Cut into squares or circles, about 4 inches in size.

7.Place a spoonful of the onion and cheese filling in the center of each pastry square or circle. Fold the pastry over to create a triangle or half-moon shape, and press the edges to seal. Use a fork to crimp the edges for a decorative touch.

8.Place the stuffed pastries on a baking sheet lined with parchment paper. Brush the tops with the beaten egg to give them a golden color when baked.

9.Bake in the preheated oven for 20-25 minutes, or until the pastries are golden brown and flaky. Remove from the oven and let cool slightly before serving.
