Cranberry-Glazed Christmas Chicken

1.Preheat your oven to 375°F (190°C).

2.In a medium saucepan, combine the cranberries, sugar, orange juice, balsamic vinegar, and Dijon mustard. Cook over medium heat, stirring occasionally, until the cranberries burst and the sauce thickens, about 10-15 minutes. Remove from heat and set aside.

3.Season the chicken breasts with garlic powder, onion powder, salt, and black pepper on both sides.

4.In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and sear for 3-4 minutes on each side until golden brown.

5.Once the chicken is seared, pour the cranberry sauce over the chicken, making sure to coat each piece well. If using, sprinkle the chopped rosemary on top for added flavor.

6.Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

7.Remove the skillet from the oven and let the chicken rest for 5 minutes before serving. Drizzle any remaining cranberry sauce from the skillet over the chicken before plating.
