The Portuguese colonial era in India began around the turn of the 16th century, ended in 1961 and centred on the western state of Goa. You can still see the influence of this period on the cooking of Portugal, most noticeably in the use of spices. This is spiced up a bit to incorporate the flavours of Goa and you can see Indian influences in this fiery rib dish
