Tropical Coconut Christmas Cake

1.Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

2.In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

3.Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract and coconut milk until combined.

4.In a separate bowl, whisk together the flour, baking powder, salt, and shredded coconut.

5.Gradually add the dry ingredients to the wet mixture, mixing until just combined. Do not overmix.

6.Pour the batter into the prepared cake pan and smooth the top with a spatula.

7.Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

8.Once baked, remove the cake from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

9.While the cake is cooling, prepare the frosting by mixing the powdered sugar with 2 tablespoons of coconut milk until smooth and creamy.

10.Once the cake is completely cool, spread the frosting evenly over the top of the cake.

11.Sprinkle the additional shredded coconut on top of the frosting for decoration.
