Coconut Cream Delight

1.In a medium saucepan, combine the coconut milk, granulated sugar, cornstarch, and salt. Whisk together until smooth and well combined.

2.Place the saucepan over medium heat and cook the mixture, stirring constantly, until it thickens and begins to bubble, about 5-7 minutes.

3.Once thickened, remove the saucepan from heat and stir in the vanilla extract and shredded coconut. Mix well to incorporate all ingredients.

4.Allow the mixture to cool slightly, then pour it into individual serving dishes or a large bowl. Cover with plastic wrap, pressing it directly onto the surface to prevent a skin from forming.

5.Refrigerate for at least 2 hours or until fully chilled and set.

6.Before serving, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the chilled coconut mixture until combined and fluffy.

7.Serve the Coconut Cream Delight chilled, garnished with fresh mint leaves.
