1.In a large pot, heat a little oil over medium heat and sauté the onions, garlic, and ginger until fragrant and the onions are translucent.

2.Add the pork belly cubes to the pot and cook until they are browned on all sides, about 5-7 minutes.

3.Pour in the water and add the bay leaf, fish sauce, vinegar, sugar, and ground black pepper. Stir well to combine.

4.Bring the mixture to a boil, then reduce the heat to low and cover the pot. Let it simmer for about 30 minutes, or until the pork is tender.

5.Once the pork is tender, slowly stir in the pork blood, making sure to mix it well to avoid lumps. Cook for an additional 10-15 minutes, stirring occasionally.

6.Add the sliced green chili peppers and adjust the seasoning with salt to taste. Cook for another 5 minutes to allow the flavors to meld together.

7.Remove from heat and let it sit for a few minutes before serving.
