Smoky Tofu Pasta Delight

1.Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

2.In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.

3.Add the minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant.

4.Stir in the cubed smoked tofu and cook for 5-7 minutes until it starts to brown slightly.

5.Add the canned diced tomatoes, smoked paprika, dried oregano, and dried basil to the skillet. Stir well to combine and let the mixture simmer for about 10 minutes, allowing the flavors to meld together. Season with salt and pepper to taste.

6.Once the sauce has thickened, add the cooked pasta to the skillet and toss everything together until the pasta is well coated with the sauce.

7.Serve hot, garnished with fresh basil leaves if desired.
