Matcha Mochi Ice Cream Sandwiches

1.In a mixing bowl, combine the sweet rice flour, granulated sugar, and matcha powder.

2.Gradually add water to the dry ingredients, whisking until smooth and free of lumps.

3.Transfer the mixture to a microwave-safe dish and cover it with plastic wrap, leaving a small vent for steam to escape.

4.Microwave the mixture on high for 1 minute, then stir. Repeat this process for a total of 3 minutes, stirring after each minute until the mochi is thick and translucent.

5.Dust a clean surface with cornstarch and pour the cooked mochi onto it. Dust the top of the mochi with more cornstarch to prevent sticking.

6.Using a rolling pin, roll the mochi to about 1/4 inch thickness. Cut out circles using a cookie cutter or a glass, about 3 inches in diameter.

7.Scoop small balls of ice cream and place them in the center of half of the mochi circles. If using, add a small dollop of red bean paste on top of the ice cream.

8.Top each ice cream-filled mochi circle with another mochi circle, pressing gently to seal the edges.

9.Wrap each mochi sandwich in plastic wrap and freeze for at least 1 hour to firm up before serving.
