Almond Oreo Cake

1.Preheat your oven to 180°C (350°F) and grease a small baking tray with butter.

2.In a mixing bowl, combine the crushed Oreo biscuits, sugar, baking powder, and baking soda. Mix well until combined.

3.In another bowl, whisk together the milk, curd, honey, and vanilla essence until smooth.

4.Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.

5.Fold in the melted butter until the batter is smooth and well incorporated.

6.Pour the batter into the prepared baking tray and spread it evenly.

7.In a separate bowl, prepare the almond crumble by mixing the flour, sugar, and butter until it resembles coarse crumbs. Stir in the finely chopped almonds.

8.Sprinkle the almond crumble evenly over the top of the cake batter.

9.Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

10.Once baked, remove from the oven and allow to cool in the tray for about 10 minutes before transferring to a wire rack to cool completely.
