Thai Honey Sesame Chicken

1.In a large bowl, season the chicken pieces with salt and pepper. Set aside.

2.Prepare a breading station: In one bowl, place the flour; in a second bowl, add the beaten eggs; and in a third bowl, place the panko breadcrumbs.

3.Dredge each piece of chicken in flour, shaking off excess, then dip in the beaten eggs, and finally coat with panko breadcrumbs. Ensure each piece is well-coated.

4.In a large skillet or frying pan, heat oil over medium-high heat. Once hot, carefully add the breaded chicken pieces in batches, frying until golden brown and cooked through, about 4-5 minutes per side. Remove and drain on paper towels.

5.In a separate saucepan, combine honey, soy sauce, sesame oil, rice vinegar, garlic, and ginger. Heat over medium heat until the sauce is well combined and slightly thickened, about 3-4 minutes.

6.Once the chicken is cooked and drained, add it to the saucepan with the honey sesame sauce. Toss to coat the chicken evenly in the sauce.

7.To serve, place a generous scoop of jasmine rice on each plate, top with the honey sesame chicken, and drizzle any remaining sauce over the top. Garnish with sesame seeds and sliced green onions.
