Sizzling Souvlaki: Marinated Chicken Skewers

1.In a large bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, dried thyme, ground cumin, paprika, salt, and black pepper to create the marinade.

2.Add the chicken cubes to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or preferably overnight for maximum flavor.

3.Preheat your grill or grill pan over medium-high heat.

4.While the grill is heating, prepare the tzatziki sauce. In a separate bowl, mix together the Greek yogurt, grated cucumber (ensure excess water is squeezed out), minced garlic, fresh dill, lemon juice, and salt to taste. Set aside in the refrigerator to chill.

5.Once the chicken has marinated, thread the chicken cubes onto the skewers, leaving a little space between each piece for even cooking.

6.Place the skewers on the preheated grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).

7.Remove the skewers from the grill and let them rest for a few minutes before serving.

8.Serve the sizzling souvlaki hot with the tzatziki sauce on the side for dipping.
