Dehydrated Slime Mold Dark Chocolate Pudding

1.In a medium saucepan, combine the whole milk, heavy cream, and granulated sugar. Heat over medium heat until the mixture is warm but not boiling, stirring occasionally to dissolve the sugar.

2.Add the chopped dark chocolate and unsweetened cocoa powder to the warm milk mixture. Stir continuously until the chocolate is fully melted and the mixture is smooth and glossy.

3.In a separate bowl, whisk together the powdered dehydrated slime mold, egg yolks, vanilla extract, sea salt, cornstarch, and water until well combined.

4.Slowly pour the warm chocolate mixture into the bowl with the egg yolk mixture, whisking constantly to temper the yolks and prevent curdling.

5.Return the combined mixture to the saucepan over medium heat. Cook, stirring constantly, until the pudding thickens and coats the back of a spoon, about 5-7 minutes. Do not let it boil.

6.Once thickened, remove the saucepan from the heat and pour the pudding through a fine-mesh sieve into a bowl to remove any lumps. This will ensure a silky texture.

7.Cover the surface of the pudding with plastic wrap to prevent a skin from forming. Chill in the refrigerator for at least 2 hours or until set.

8.To serve, spoon the pudding into individual dessert cups and garnish with a sprinkle of cocoa powder and a few pieces of dark chocolate shavings.
