Maggi Capsicum Toastie

1.In a small bowl, mix the butter and mayonnaise together until well combined. Season with salt and black pepper to taste. Set aside.

2.Prepare the Maggi noodles according to the package instructions. Once cooked, drain any excess water and set aside.

3.In a skillet, heat the olive oil over medium heat. Add the diced capsicum and sauté for about 3-4 minutes until they are tender yet still crisp. Season with a pinch of salt and black pepper. Remove from heat and set aside.

4.Spread a generous layer of the mayonnaise-butter mixture on one side of each slice of bread.

5.On the unspread side of two slices, layer the cooked Maggi noodles evenly. Top with the sautéed capsicum, then place the remaining slices of bread on top, spread side facing out.

6.In the same skillet, toast the sandwiches over medium heat for about 3-4 minutes on each side, or until the bread is golden brown and crispy. Press down gently with a spatula to ensure even toasting.

7.Once toasted, remove from the skillet and cut the sandwiches diagonally. Garnish with fresh coriander leaves if desired.
