Cheddar Snow Mash

1.In a medium saucepan, melt the unsalted butter over medium heat until fully melted and slightly bubbling.

3.Gradually pour in the heavy cream while whisking continuously to avoid lumps. Continue to whisk until the mixture thickens slightly, about 3-4 minutes.

4.Reduce the heat to low and slowly add the shredded sharp cheddar cheese in small batches, stirring constantly until fully melted and smooth.

5.Add garlic powder, smoked paprika, salt, and freshly ground black pepper to the cheese sauce. Stir well to combine and adjust seasoning to taste.

6.Keep the sauce warm on low heat, stirring occasionally to maintain smoothness.

7.Pour the cheddar snow mash generously over freshly cooked French fries or serve as a dipping sauce.

8.Garnish with chopped fresh chives if desired, adding a fresh color contrast and mild onion flavor.
