Exotic Venison Delights

1.Preheat the grill or grill pan to medium-high heat.

2.Rub the venison loin with 1 tablespoon olive oil, smoked paprika, salt, and freshly ground black pepper. Set aside to marinate for 10 minutes.

3.In a blender or food processor, combine the drained lychee, honey, and unsalted butter. Blend until smooth to create the lychee mash. Transfer to a bowl and keep warm.

4.Toss the dragonfruit cubes with the remaining 1 tablespoon olive oil and coconut oil to coat evenly.

5.Place the venison on the hot grill and cook for about 4-5 minutes per side for medium-rare, or until desired doneness. Remove from grill, cover loosely with foil, and let rest for 5 minutes.

9.To plate, spread a generous spoonful of warm lychee mash on each plate. Slice the rested venison loin into medallions and arrange over the mash.

10.Arrange the roasted dragonfruit cubes artistically beside the venison.

11.Place 2-3 chocolate-dipped strawberries on each plate as a sweet accent.

12.Garnish with fresh mint leaves for a pop of color and freshness.
