Dragon Avocado Cupcakes with Mango Curry Glaze

1.Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.

2.In a medium bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.

3.In a large bowl, combine the mashed avocado and sugar. Beat in the eggs one at a time until fully incorporated.

4.Add the Greek yogurt, vegetable oil, and vanilla extract to the avocado mixture and mix well. If desired, add a few drops of green food coloring to enhance the vibrant dragon-green color and mix until uniform.

5.Gradually add the dry ingredients to the wet ingredients, folding gently until just combined. Avoid overmixing to keep the cupcakes tender.

6.Divide the batter evenly among the cupcake liners, filling each about 2/3 full.

7.Bake for 16-18 minutes, or until a toothpick inserted into the center comes out clean. Remove from oven and allow cupcakes to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
