Spicy Bacon-Wrapped Jalapeño Poppers

1.Preheat your grill to medium-high heat, approximately 375°F (190°C).

2.Wash the jalapeños and slice them in half lengthwise. Using a spoon, carefully remove the seeds and membranes to reduce the heat and create space for the filling. Wear gloves to protect your skin from the capsaicin.

3.In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, minced garlic, smoked paprika, cayenne pepper, salt, and black pepper. Mix thoroughly until smooth and evenly blended.

4.Fill each jalapeño half generously with the cream cheese mixture, smoothing the top with a spoon or your fingers.

5.Cut each slice of bacon in half crosswise. Wrap each stuffed jalapeño half with a half slice of bacon, starting at the bottom and spiraling up to cover the filling. Secure the bacon with a toothpick to hold it in place during grilling.

6.Lightly oil the grill grates or spray with non-stick cooking spray to prevent sticking.

7.Place the bacon-wrapped jalapeño poppers on the grill. Cook for about 12-15 minutes, turning occasionally, until the bacon is crispy and the jalapeños are tender but still hold their shape.

8.Remove the toothpicks before serving. Serve warm as a spicy, smoky appetizer or snack.
