Marshmallow Cloud Cookies

1.Preheat your oven to 190°C (375°F). Line baking sheets with parchment paper.

2.In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.

3.Beat in the egg and vanilla extract until well combined.

4.In a separate medium bowl, whisk together the all-purpose flour, baking soda, and salt.

5.Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

6.Gently fold in the mini marshmallows.

7.Drop rounded tablespoons of dough onto the prepared baking sheets, leaving about 5cm (2 inches) between cookies.

8.Bake for 9-12 minutes, or until the edges are lightly golden brown and the centers are still soft. The marshmallows will puff up and turn golden.

9.Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
