Caribbean Coconut Fried Ice Cream Bites with Tropical Salsa

1.Prepare the Ice Cream Bites: Line a baking sheet with parchment paper and place it in the freezer to chill. Allow the ice cream to soften slightly (about 5 minutes).

2.Using a small ice cream scoop (about 2 tablespoons), quickly scoop the ice cream into uniform balls. Place the balls immediately onto the chilled baking sheet. Freeze for at least 2 hours, or until rock solid.

3.Prepare the Coating: In a shallow dish, combine the toasted coconut, crushed corn flakes, and cinnamon. In a second shallow dish, place the flour. In a third dish, lightly whisk the egg whites until slightly frothy.

4.Working quickly, take the frozen ice cream balls and roll each one first in the flour, shaking off excess. Then dip completely into the egg whites, allowing excess to drip off. Finally, roll immediately and thoroughly in the coconut-cereal mixture, pressing firmly to ensure a thick, even coating. Repeat the egg white and coating process one more time for a double layer, which is crucial for preventing melting during frying.

5.Return the double-coated ice cream balls to the freezer for a minimum of 4 hours, or preferably overnight, until completely frozen solid. This step is critical for success.

6.Prepare the Tropical Salsa: In a medium bowl, gently combine the diced mango, pineapple, red onion, lime juice, cilantro, jalapeño (if using), sugar, and salt. Stir gently, cover, and refrigerate until ready to serve.
