2.In a separate small bowl, whisk the egg, milk, and 1 tablespoon of melted butter until just combined.

3.Pour the wet ingredients into the dry ingredients and whisk until the batter is smooth, being careful not to overmix; a few small lumps are acceptable.

4.Heat the Frying Oil: Pour about 1 inch of vegetable oil or canola oil into a deep, heavy-bottomed skillet or Dutch oven. Heat the oil over medium-high heat until it reaches 350°F (175°C).

5.Prepare the Sausages: Lightly pat the link sausages dry with a paper towel and sprinkle them evenly with black pepper.

6.Dip and Fry: Working in batches of 3 or 4 to avoid overcrowding the pan, spear a sausage with a long wooden skewer or dip it carefully using tongs.

7.Dip the sausage entirely into the pancake batter, ensuring it is fully coated. Allow excess batter to drip off briefly.

8.Carefully lower the battered sausage into the hot oil. Fry for 3 to 4 minutes, turning occasionally, until the pancake coating is deep golden brown and crispy all over.

9.Remove the cooked wraps using tongs or a slotted spoon and place them on a wire rack lined with paper towels to drain excess oil.

10.Repeat the dipping and frying process with the remaining sausages, ensuring the oil temperature returns to 350°F (175°C) between batches.

11.Serve immediately while hot alongside small bowls of maple syrup or Dijon mustard for dipping.
