Classic English Ploughman's Pickle

1.Place the carrots, cauliflower, red onion, and apple into the Thermomix bowl. Chop for 4-5 seconds at Speed 4.5 until the vegetables are in a uniform 1/4-inch dice; avoid over-processing into a mash.

2.Add the chopped dates and gherkins to the bowl. Pulse 2-3 times using the Turbo function for 0.5 seconds each to roughly incorporate the softer ingredients without losing their texture.

3.Add the malt vinegar, dark brown sugar, sea salt, mustard seeds, ground ginger, ground cloves, and cayenne pepper to the vegetable mixture.

4.Set the Thermomix to cook for 25 minutes at 100°C (212°F) on Reverse Speed 1. Remove the measuring cup and place the simmering basket on top of the lid to allow steam to escape while preventing splashes.

5.Check the vegetables for doneness; they should be translucent and tender but still possess a distinct crunch. Pour the cornstarch slurry through the hole in the lid.

6.Cook for a final 5 minutes at 100°C (212°F) on Reverse Speed 1 until the liquid has thickened into a glossy, dark mahogany syrup that clings to the vegetables.

7.Immediately transfer the boiling hot pickle into sterilized glass jars, leaving 1/2 inch (1 cm) of headspace. Wipe the rims clean and seal tightly with sterilized lids.

8.Allow the jars to cool completely at room temperature. For the most authentic, developed flavor, store the jars in a cool, dark place for at least 2 weeks before consuming. Once opened, keep refrigerated.
