Sweet Potato and Black Bean Quesadillas

Preparation of the Filling In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and cook until tender, about 10-12 minutes. Add the black beans to the skillet and stir to combine with the sweet potatoes. Cook for an additional 2-3 minutes.

Assembly of Quesadillas Place a flour tortilla on a flat surface. Spread a layer of the sweet potato and black bean filling over half of the tortilla. Sprinkle a generous amount of shredded cheese over the filling. Fold the tortilla in half to cover the filling.

Cooking the Quesadillas In a clean skillet, heat 1 tablespoon of olive oil over medium heat. Carefully transfer the assembled quesadilla to the skillet and cook for 2-3 minutes on each side, until the tortilla is golden brown and crispy, and the cheese is melted. Repeat for the remaining quesadillas.
