Unusual Side Dish for a Large Family

Preheat the Oven Preheat the oven to 400°F (200°C).

Prepare the Potatoes Wash and peel the potatoes. Slice them into thin rounds.

Prepare the Vegetables Seed and slice the red and yellow bell peppers. Thinly slice the onion. Mince the garlic cloves.

Marinate the Vegetables Pour the herb marinade over the vegetables and toss until all the vegetables are coated with the marinade.

Arrange the Vegetables Transfer the marinated vegetables to a large baking dish and spread them out evenly.

Add the Topping In a small bowl, combine the grated Parmesan cheese, bread crumbs, and melted butter. Sprinkle the mixture over the vegetables.

Bake the Dish Bake in the preheated oven for 35-40 minutes, or until the vegetables are tender and the topping is golden brown.
