Chicken and Vegetable Pasta

Cook the Pasta Cook the pasta according to the package instructions. Drain and set aside.

Cook the Chicken Season the chicken breasts with salt, black pepper, and garlic powder. Heat olive oil in a skillet over medium heat and cook the chicken until browned and cooked through. Remove from the skillet and set aside.

Saute the Vegetables In the same skillet, add more olive oil if needed and sauté the onion, carrots, and eggplant until tender.

Add the Sauce and Pasta Add the cooked pasta, tomato sauce, Italian seasoning, and grated Parmesan cheese to the skillet with the vegetables. Stir to combine and cook for a few minutes until heated through.

Add the Chicken Slice the cooked chicken and add it to the skillet. Stir gently to incorporate the chicken into the pasta mixture.

Serve and Enjoy Serve the chicken and vegetable pasta hot, garnished with additional Parmesan cheese if desired.
