Spiced Chicken Fillet with Roasted Potatoes

Preparation Preheat the oven to 200°C (400°F).

2.In a small bowl, combine the paprika, garlic powder, dried thyme, ground cumin, ground coriander, salt, and black pepper. Mix well to create the spice rub.

3.Coat the chicken fillets with the spice rub, making sure to evenly distribute it on both sides.

4.Heat olive oil in a pan over medium-high heat. Add the chicken fillets and cook for about 3-4 minutes on each side, or until browned and cooked through.

5.Meanwhile, in a separate baking dish, toss the potato wedges with olive oil, dried rosemary, salt, and black pepper.

6.Place the chicken fillets on top of the potatoes in the baking dish.

7.Bake in the preheated oven for 20-25 minutes, or until the potatoes are crispy and golden brown.
