Pasta with Pumpkin

Roasting the Pumpkin Preheat the oven to 200°C (400°F).

2.Cut the pumpkin into cubes and place them on a baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and toss to coat evenly. Roast in the preheated oven for about 30 minutes, or until the pumpkin is tender and slightly caramelized.

Cooking the Pasta While the pumpkin is roasting, cook the pasta according to the package instructions. Drain and set aside.

Preparing the Sauce In a large saucepan, melt the butter over medium heat. Add the minced garlic and chopped onion, and sauté until softened and fragrant.

5.Add the flour to the saucepan and cook for 1-2 minutes, stirring constantly, to create a roux.

6.Gradually whisk in the milk, making sure to break up any lumps. Cook the sauce, stirring constantly, until thickened.

7.Stir in the grated Parmesan cheese until melted and smooth. Season with salt and pepper to taste.

Assembling the Dish Add the cooked pasta and roasted pumpkin cubes to the saucepan, and toss to coat the pasta and pumpkin with the sauce.

9.Serve the pasta with pumpkin hot, garnished with fresh parsley.
