Solyanka Soup

Cook the Meats In a large pot, heat some oil over medium heat. Add the diced meats and cook until browned on all sides.

Add Onion and Garlic Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.

Add Carrot and Bell Pepper Add the diced carrot and bell pepper to the pot. Cook for a few minutes until the vegetables start to soften.

Simmer the Soup Stir in the tomato paste, diced tomatoes, beef broth, water, bay leaves, paprika, dried dill, salt, and pepper. Bring the soup to a boil, then reduce the heat and let it simmer for about 30 minutes.

Add Pickles Add the sliced pickles and pickle brine to the pot. Cook for an additional 5 minutes to heat the pickles through.

Serve the Soup Remove the bay leaves from the soup. Serve hot with a dollop of sour cream and garnish with fresh dill.
