Roasting the Red Peppers Roast the red peppers on a grill or in the oven until the skin is blistered and charred. Remove from heat and let them cool.

Preparing the Red Peppers Once the peppers are cool, peel off the charred skin and remove the stems and seeds. Chop the flesh into small pieces.

Making the Spice Mix In a blender or food processor, combine the chopped peppers, garlic cloves, cilantro, parsley, ground coriander, ground fenugreek, ground cumin, salt, and sugar. Blend until smooth.

Emulsifying the Sauce Slowly drizzle in the vegetable oil while the blender or food processor is running. Continue blending until the mixture is well emulsified.

Adjusting the Flavor Taste the adzhika and adjust the seasoning if needed. Add extra spiciness with red pepper flakes, a tangy kick with vinegar, or more depth of flavor with ground black pepper.

Storing the Adzhika Transfer the adzhika to a clean jar or container. Store in the refrigerator for at least 24 hours to allow the flavors to meld together.
