Baked Chicken

Preheat the Oven Preheat the oven to 400°F (200°C).

Prepare the Marinade In a large bowl, combine the olive oil, lemon juice, minced garlic, dried thyme, smoked paprika, salt, and black pepper. Mix well.

Marinate the Chicken Pat dry the chicken thighs with paper towels, then add them to the marinade. Coat the chicken well with the marinade, making sure to get under the skin. Let the chicken marinate for at least 30 minutes, or up to overnight in the refrigerator.

Prepare the Breading In a shallow dish, combine the breadcrumbs, grated Parmesan cheese, dried parsley, garlic powder, onion powder, paprika, salt, and black pepper. Mix well.

Bread the Chicken Dip each marinated chicken thigh into the beaten eggs, then coat it evenly with the breadcrumb mixture.

Arrange the Chicken on the Baking Sheet Place the breaded chicken thighs on a baking sheet lined with parchment paper.

Bake the Chicken Bake the chicken in the preheated oven for 25-30 minutes, or until the internal temperature reaches 165°F (74°C) and the crust is golden brown and crispy.
