Spiced Grilled Chicken with Caramelized Onions

Marinating the Chicken In a bowl, mix together olive oil, minced garlic, paprika, cumin, coriander, cinnamon, salt, pepper, and lemon juice to create the marinade. Add the chicken breasts to the marinade, ensuring they are evenly coated. Cover and refrigerate for at least 2 hours or overnight for best results.

Caramelizing the Onions In a large skillet, heat butter and olive oil over medium-low heat. Add the thinly sliced onions and cook, stirring occasionally, until they begin to soften and turn golden brown. Sprinkle brown sugar and salt over the onions and continue to cook, stirring occasionally, until the onions are caramelized and have a rich brown color. This will take about 20-30 minutes. Remove from heat and set aside.

Grilling the Chicken Preheat the grill to medium-high heat. Remove the chicken from the marinade and discard the excess marinade. Grill the chicken breasts for 6-7 minutes on each side, or until they are fully cooked and have grill marks. Remove from the grill and let the chicken rest for a few minutes.
