Pumpkin Pie Chex Mix

Preparation Preheat your oven to 325°F (163°C). Line a large baking sheet with parchment paper or a silicone baking mat.

Mixing the Base In a large mixing bowl, combine the Rice Chex cereal (3 cups), Corn Chex cereal (3 cups), Cinnamon Chex cereal (2 cups), pretzels (2 cups), roasted salted pumpkin seeds (1 cup), dried cranberries (1 cup), and golden raisins (1 cup). Mix well to evenly distribute the ingredients.

Preparing the Pumpkin Pie (2 teaspoons) Coating In a small microwave-safe bowl, melt the unsalted butter (½ cup). Add the granulated sugar (½ cup), packed brown sugar (½ cup), pumpkin pie spice (2 teaspoons), vanilla extract (1 teaspoon), and salt (½ teaspoon). Stir until well combined and the sugar has dissolved.

Coating the Chex Mix Pour the melted pumpkin pie (2 teaspoons) coating over the Chex mix base. Use a spatula or wooden spoon to gently toss and coat the ingredients until they are evenly coated with the mixture.

Baking the Chex Mix Spread the coated Chex mix in an even layer onto the prepared baking sheet.

Baking Time Bake in the preheated oven for 20 minutes, stirring halfway through to ensure even baking.

Cooling Remove from the oven and let the Pumpkin Pie (2 teaspoons) Chex Mix cool completely on the baking sheet. As it cools, it will become crisp and crunchy.

Optional Toppings If desired, melt the white chocolate chips (1 cup) in a microwave-safe bowl according to the package instructions. Drizzle the melted chocolate over the cooled Chex mix. Alternatively, you can dust the Chex mix with powdered sugar (½ cup) for a sweet finishing touch.

Storage and Enjoyment Allow the chocolate to set and the powdered sugar (½ cup) to adhere before transferring the Pumpkin Pie (2 teaspoons) Chex Mix to an airtight container for storage. Enjoy!
