Italian Cannoli Chex Mix

1Prepare the Cereal Mix In a large mixing bowl, combine the Rice Chex (3 cups), Corn Chex (3 cups), Honey Nut Chex (2 cups), mini pretzels (1 cup), and dried cranberries (1 cup). Set aside.

2Prepare the Cannoli Coating In a separate bowl, combine the powdered sugar (½ cup), cocoa powder (¼ cup), ground cinnamon (½ teaspoon), and ground nutmeg (¼ teaspoon). Mix well.

3Prepare the Cannoli Filling In another bowl, beat together the ricotta cheese (1 cup), powdered sugar (¼ cup), and vanilla extract (½ teaspoon) until smooth and creamy. Fold in the mini chocolate chips (¼ cup).

4Coat the Cereal Mix Pour the Cannoli Coating mixture over the cereal mix and toss until all the cereal pieces are evenly coated.

5Bake the Chex Mix Spread the coated cereal mix on a baking sheet in an even layer. Bake in a preheated oven at 250°F (120°C) for 1 hour, stirring every 15 minutes.

6Cool the Chex Mix Remove the baked Chex Mix from the oven and let it cool completely.

7Add the Cannoli Filling Once cooled, gently fold in the prepared Cannoli Filling into the Chex Mix, ensuring it is evenly distributed.

8Garnish Sprinkle the mini chocolate chips (¼ cup) and chopped pistachios (¼ cup) over the Chex Mix. Dust with powdered sugar for (¼ cup) an extra touch of sweetness.
