Roasted Beef with Rice

1.Preheat the oven to 350°F (175°C).

2.In a small bowl, combine the minced garlic, dried rosemary, dried thyme, salt, and pepper to create a seasoning blend for the beef.

3.Rub the seasoning blend all over the beef roast, ensuring that it is evenly coated.

4.Heat olive oil in a large skillet over medium-high heat. Sear the beef roast on all sides until browned, about 2-3 minutes per side.

5.Transfer the seared beef roast to a roasting pan or baking dish and place it in the preheated oven.

6.Roast the beef for about 20 minutes per pound for medium-rare, or until it reaches your desired level of doneness.

7.While the beef is roasting, prepare the rice. In a medium-sized saucepan, bring water to a boil.

8.Add the rice, butter, and salt to the boiling water. Stir briefly, then reduce the heat to low and cover the saucepan.

9.Simmer the rice for about 15-18 minutes, or until all the water is absorbed and the rice is tender.

10.Remove the beef roast from the oven and let it rest for a few minutes before slicing.

11.Slice the roasted beef into thin slices and serve it with the fluffy white rice.
