Asian Soba Noodles with Chicken

Preparation 1. Cook the soba noodles according to package instructions. Rinse under cold water and set aside.

Cooking the Chicken 2. In a pot, bring the chicken broth to a simmer. Add the chicken breasts and poach for 15-20 minutes or until cooked through. Remove and shred the chicken.

Preparing the Broth 3. To the simmering broth, add soy sauce, rice vinegar, sesame oil, ginger, garlic, and red chili (if using). Simmer for another 10 minutes for flavors to meld.

Assembling the Dish 4. Divide the cooked soba noodles into serving bowls. Top with shredded chicken and ladle the fragrant broth over the noodles.

5.Garnish with sesame seeds, chopped cilantro, green onions, and a squeeze of lime juice before serving.
