Homemade Peanut Butter Cups

Preparing the Peanut Butter Filling 1. In a bowl, combine creamy peanut butter, corn syrup, sugar, peanut flour, nonfat milk, salt, vegetable oil, cocoa powder, natural flavor extract, and annatto color. Mix until smooth and well combined.

Preparing the Chocolate Coating 2. Melt the milk chocolate chips in a double boiler or microwave, stirring in vegetable oil and soy lecithin until smooth.

3.Line a mini muffin pan with paper or silicone mini muffin cups.

4.Spoon a small amount of the melted chocolate into the bottom of each cup, spreading it up the sides slightly.

5.Place the pan in the freezer for 5-10 minutes to set the chocolate.

6.Remove the pan from the freezer and place a spoonful of the peanut butter filling in each cup, pressing it down gently to form a flat surface.

7.Cover the peanut butter filling with more melted chocolate, ensuring it seals the edges to prevent leaking.

8.Return the pan to the freezer for another 10-15 minutes until the filling is firm and the chocolate is set.

9.Once set, remove the peanut butter cups from the pan by gently twisting them out of the cups.
