Cheesy Potato and Tomato Bake

1Preheat Oven Preheat the oven to 375°F (190°C).

2Preparation of Ingredients Peel the potatoes (2 large) and slice them thinly. Slice the tomatoes (2) thinly as well.

3Making the Sauce In a small saucepan, melt the butter (1 tablespoon) over medium heat. Add the minced garlic (1 clove) and sauté until fragrant, about 1 minute.

4Finishing the Sauce Pour in the heavy cream (½ cup) and season with salt, pepper, and dried thyme (1 teaspoon). Let the mixture simmer for 2-3 minutes until slightly thickened.

5Layering the Bake Layer half of the sliced potatoes (2 large) in a baking dish. Top with half of the sliced tomatoes (2). Sprinkle half of the cheddar cheese (1 cup) over the tomatoes (2). Pour half of the cream sauce over the cheese layer.

6Continuing the Layers Repeat the layers with the remaining potatoes (2 large), tomatoes (2), cheddar cheese (1 cup), and cream sauce.

7Topping the Bake Top the bake with breadcrumbs (¼ cup) and grated Parmesan cheese (¼ cup) for a crispy topping.

8Baking the Dish Cover the baking dish with foil and bake in the preheated oven for 40 minutes.

9Final Baking Step Remove the foil and bake for an additional 10-15 minutes until the top is golden and bubbly.
