Beetroot Mayo Salad

Preparing the Beetroots 1. Wash and peel the beetroots, then boil them until they are tender. Allow them to cool, then dice them into small pieces.

Making the Mayo Dressing 2. In a small bowl, combine the mayonnaise, lemon juice, Dijon mustard, chopped parsley, salt, and pepper. Mix well until all ingredients are thoroughly incorporated.

Assembling the Salad 3. In a large mixing bowl, add the diced beetroots. Pour the mayo dressing over the beetroots and gently toss until the beetroots are evenly coated with the dressing.

4.Sprinkle the toasted walnuts over the salad and garnish with fresh parsley leaves.
