Creamy Tomato Basil Soup

Simmering Tomatoes Add the canned tomatoes with their juices and vegetable broth. Bring the mixture to a boil, then reduce heat and simmer for 20 minutes until the tomatoes are softened.

Blending and Seasoning Use an immersion blender to blend the soup until smooth. Stir in the heavy cream and season with salt and pepper to taste. Simmer for an additional 5 minutes.
