Lemon & Artichoke Yams

Preheat the Oven Preheat the oven to 375°F (190°C) and grease a baking dish with oil.

Prepare the Yam Mixture In a large bowl, combine the cubed yams, chopped artichoke hearts, lemon zest, lemon juice, olive oil, paprika, garlic powder, salt, and pepper. Toss until well coated.

Assemble the Dish Transfer the yam mixture to the greased baking dish, spreading it out evenly.

Make the Topping In a small bowl, mix together the panko breadcrumbs, Parmesan cheese, parsley, and olive oil until combined.

Add the Topping Sprinkle the breadcrumb mixture evenly over the yam mixture in the baking dish.

Bake Bake in the preheated oven for 40-45 minutes, or until the yams are tender and the topping is golden brown.
