Delectable Chocolate Truffle Cake

1Preparing the Cake Batter Preheat the oven to 350°F (180°C) and grease two 9-inch round cake pans.

2In a large mixing bowl, combine the flour, cocoa powder (1 cup), sugar, baking powder (1 teaspoon), baking soda (1 teaspoon), and salt (1 teaspoon).

3Add buttermilk (1 cup), hot water (1 cup), vegetable oil (½ cup), eggs (2 large), and vanilla extract (1 teaspoon) to the bowl. Mix until the batter is smooth and well combined.

4Divide the batter evenly between the prepared cake pans and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

5Making the Chocolate Truffle Icing In a saucepan, heat the heavy cream (2 cups) until it simmers. Remove from heat and add the chocolate chips (16 ounces). Let it sit for a minute, then stir until smooth.

6Stir in the vanilla extract (2 teaspoons) and let the ganache cool until it thickens to a spreadable consistency.

7Assembling the Cake Once the cakes have cooled, spread a layer of chocolate truffle icing on top of one cake layer. Place the second layer on top and cover the cake with the remaining icing.

8Garnish the cake with chocolate shavings, fresh berries, and a dusting of powdered sugar.

9For an extra touch, drizzle raspberry coulis and serve with a dollop of whipped cream on the side.
