Spicy Egg Curry

Prepare the Curry Base 1. Heat oil in a pan over medium heat. 2. Add the finely chopped onions and sauté until translucent. 3. Stir in the diced tomatoes and cook until they soften. 4. Add the chilli powder, turmeric powder, and coriander powder. Stir well to combine.

Cook the Eggs 1. Boil the eggs until they are hard-boiled, then peel and halve them.

Combine and Simmer 1. Gently place the halved boiled eggs in the curry base. 2. Simmer the curry on low heat for 10-15 minutes to allow the flavors to meld together.

Serve 1. Serve hot with steamed rice or crusty bread for a satisfying meal.
