Lemon Mint Chicken Delight

Start by preparing the ingredients Thinly slice 1 lemon and set aside. Juice the other lemon and set the juice aside.

In a bowl, combine the chili powder (1 teaspoon) with a pinch of salt and pepper. Rub this mixture evenly over the chicken breasts (4).

Heat some oil in a skillet over medium-high heat. Cook the seasoned chicken breasts (4) until golden brown and fully cooked, about 6-8 minutes per side.

Once the chicken is cooked, remove it from the pan and set it aside. In the same skillet, add the sliced lemon and cook until slightly caramelized.

Return the chicken to the skillet, pouring the lemon juice over the top. Allow the chicken to simmer in the lemon juice for a few minutes to absorb the flavors.

Finally, sprinkle the fresh mint leaves (¼ cup) over the chicken, covering it evenly. Cook for an additional minute to allow the mint to wilt slightly.

Serve the Lemon Mint Chicken hot, garnished with extra mint leaves for a burst of freshness.
