1Chop the fish fillets, onion, garlic, scotch bonnet pepper, and bell pepper finely. In a bowl, mix the chopped ingredients with flour, baking powder, thyme, paprika, black pepper, and salt. In a separate bowl, whisk together milk and eggs. Combine the wet and dry ingredients to form a thick batter.

2Heat vegetable oil in a pan. Using a spoon, drop spoonfuls of the batter into the hot oil. Fry the fritters until golden brown on both sides. Make sure the inside is cooked through.

3Remove the fritters from the oil and place them on a paper towel to drain excess oil. Serve hot and enjoy!
